This looks delish! I never have any luck finding artichokes in Ireland, though. They’re such a luxury for me now!
I thought it was a clubhouse sandwich. Hmm maybe I should make my own baked chicken focaccia clubhouse sandwich. Yum and delicious.
Emily, I always use jarred Sacla brand artichokes, you can find them in the Italian section of the grocery store, usually by the pesto or jarred sauces. I’m sure the Tesco Extra in Drogheda has them if it was ever convenient for you to pop over there on your way to or from work.
This is a very quick way to my heart. No better comfort food than a warm chicken sandwich in my book.
